One of the downsides to raw milk is how short the shelf life is. We can make ours last for about a week but after that the milk takes on a sour taste so we decided to get creative!

What Do I Need for Instant Pot Yogurt
Do your gut health a huge favor and think about making this yogurt for yourself. Here are all of the things you will need.
- An Instant Pot
- 1/2 gallon of raw milk
- 2 tbsp cultured greek yogurt
- 1 can of sweetened condensed milk **optional**
Can I use pasteurized milk?
Yes! You can use pasteurized milk and even ultra pasteurized milk but your yogurt might be a little more runny. It will also be harder to digest since pasteurizing milk kills lactase, the enzyme needed to digest lactose. Also 99.9% of the bacteria is boiled off (which you need to culture) and this will make the process a little harder.
Is Raw Milk Safe?




To answer this question you need to know where your raw milk is coming from. If it is coming from clean, healthy, grass fed farms, then yes! It will be full of absorbable vitamin A D & K, phosphorus, zinc, conjugated linoleic acid (CLA), and omega-3 fatty acids, plus many beneficial enzymes and probiotics. The good bacteria that is in healthy cow milk helps balance the other bacteria.
If it is coming from a traditional filthy dairy facility NO. Those poor cows are forced to produce way more milk than they are supposed to which makes them prone to mastitis (ouch) which leads to infections and pus… which leads to antibiotics. If you drank raw milk from those facilities you would be horrified.

How Long Will My Yogurt Last In My Fridge?
If you only use clean utensils to scoop it out and keep it refrigerated your homemade yogurt could last up to 10 days in your fridge (if it makes it that long)!
Just be mindful of adding extra bacteria to your yogurt aka- dirty toddler fingers that tend to want to swirl around in it when I am not looking.
Do I Need to Boil My Raw Milk Before I Make My Yogurt?
No! If it makes you feel better, by all means, boil away. But when you do this you will be killing off a lot of the nutrients and making your yogurt less nutritious.
How do I Make My Yogurt Thicker?
If you are finding your yogurt to be more runny than you would like there are a few different things you can do.
- Use a less or better yet non pasteurized milk
- Add a tbsp or two of gelatin
- Use a cheesecloth strainer to strain out the whey (don’t waste the way- click here to find a use for yours)
- If you choose to heat your milk, heat it for longer, 160-180 for about 20-30 minutes

Ingredients
- 1/2 gallon raw milk
- 2 tbsp cultured plain greek yogurt
- 1 tbsp of gelatin *optional*
- 1 can of organic sweetened condensed milk *optional*
Instructions
- Make sure you clean out your instant pot well. This is where sterility is a good thing.
- add 2 tbsp of a good cultured plain greek yogurt like this one to your clean instant pot.
- pour in a cup of milk to the instant pot and whisk together until there are little lumps
- add the rest of the milk
- cover with a glass instant pot lid like this one or just use a large plate
- hit the yogurt button and let it slowly cook
- when it finishes cooking move it to the fridge to cool off
- Enjoy!
If you want a thicker yogurt, separate the yogurt from the liquid whey. You can do this by using a cheese-cloth and straining your yogurt.
If you want a sweeter version add a can of sweetened condensed milk to the 4th step.
I like to add fresh fruit, local honey, toasted coconut flakes and cocoa nibs to my yogurt!

The cook time says 11hrs but the video shows 11:30 hrs
My yogurt setting says 8 hrs
I’ll change my setting but don’t know if I should set it for 11 or 11 1/2 hrs

My instant pot cooked it for 8 hours, but when it finished, it was just milk with a top layer that almost looked curdled. What happened?! 🥴

What kind of yogurt did you use? did you cover the top? I am not really sure I can tell you what went wrong but I would look into the yogurt you used. Maybe try a yogurt starter next time?

Yes, I covered with a plate that fit well. I used a European style yogurt- maybe that was the problem! Any idea if my wrecked batch is salvageable? Even for something else??

Maybe… and the yogurt has to be unflavored too. But it is definitely salvageable! You could use it for smoothies and could definitely use it for baking!

if I want to use a gallon of milk, do I double the yogurt to 4 TB?

I also tried this, with Organic Greek Yogurt with active bacteria culture. I covered the instant pot with a lid that seemed to fit nicely. Even after straining, it was a bit runny; it never did get good and thick. My friends tell me you have to heat it first, so the bacteria in the yogurt and the milk don’t compete against each other.
Any advice as to what to do next time?

I would try to add a tbsp of gelatin! Heating the milk and killing the bacteria defeats the purpose of raw milk in my opinion.
