This high-protein chocolate ice cream is rich, creamy, deeply chocolatey, and made with simple, nutrient-dense ingredients. Instead of trying to create the lowest-calorie ice cream possible, I wanted to make a truly nourishing dessert that my whole family would actually enjoy.

Step 1: Bloom the Gelatin

Step 2: Cook the Egg Yolks

In a small bowl, whisk the egg yolks.

Slowly whisk the warm gelatin-milk into the yolks until combined.

Pour the mixture back into the saucepan and continue cooking over low heat, whisking constantly, until it reaches 160°F. This only takes a minute or two.

Step 3: Blend the Ice Cream Base

Add the cooked yolk mixture to a blender along with:

  • Remaining 1½ cups whole milk
  • Heavy cream

Why I Use Beef Protein Instead of Whey Protein

One of the biggest differences in this recipe is the protein powder.
